I have a power supply design that uses a 1N4002 diode. In my stock I do not have this diode, but I was informed that I can use the 1N4007. The 1N4007 is for 800 V and the 1N4002 for 100 V. Wouldn't my circuit affect this?

In fact, you can always use a rectifier diode specified for higher voltage in a project without causing a problem. Thus, a 1N4002 diode can be replaced by 1N4004 or 1N4007 without problems. Similarly, you can use a 1N4007 instead of 1N4007. What you should not do is use a lower voltage one. For example, a 1N4002 instead of a 1N4004. Of course this goes for diodes of the same series or same current.
